What is Sodium Citrate and what is it used for
Sodium citrate is the family of sodium salts of citric acid (most commonly the tri-sodium salt) used as an acidity regulator, buffering agent, chelator and emulsifier. It is widely used in food and beverages (e.g., processed cheese, soft drinks) to control pH and improve texture, in pharmaceuticals and medicine as an anticoagulant for blood storage and a buffering/neutralizing agent, and in industrial and laboratory applications for chelation and pH control.
How is Sodium Citrate produced
The common industrial route is neutralization of citric acid with a sodium base (sodium hydroxide or sodium carbonate/“soda ash”) followed by concentration, crystallization and drying to give the desired sodium-citrate salt and hydrate form. Several process variations and optimisations (reaction conditions, crystallisation control, use of different sodium sources) are described in technical literature and patents to improve purity, yield and energy usage.
